Ingredients

  • 8 bone-in chicken thighs
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 lemon, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat oven to 425°F (220°C).
  2. Toss chicken with olive oil, garlic, oregano, salt, and pepper.
  3. Arrange in a baking dish and top with lemon slices.
  4. Roast for 35 minutes, until skin is crisp and chicken is cooked through.
